Week 1 Groceries

I am not sure if I went overboard on shopping or not. Also, I have some additional spinach, swiss chard, and blueberries in the fridge.

I wanted to try a few of the suggested recipes, and I want to be sure I can prep enough of this for the week.  This is one of the extra perks of doing this challenge.  I have been inconsistent in my meal prepping to save time and money and ensure a healthy meal.  The problem in the past is the lack of a meal plan. The diet part of this challenge gives me that plan and so I can shop and prep with purpose.  Once I get a feel for quantities I can streamline the process and not overshop.

Today’s groceries cost around $130, not including the $40ish for the protein powder.  I am only taking the powder since it is part of the plan.  Not sure if I will continue with that after this challenge. Depends on how I feel about it in 6 weeks!

I anticipate next week should be less since this haul included some staples that will last a while.

Spent the weekend making reasonably healthy meals with stuff I would have to toss for the challenge that formally starts Monday.
