For lunch: Tacos! Well, kinda. I will use romaine lettuce for shells. The filling is ground turkey, wild rice, kale, and pico de gallo, plus chili and other seasonings. I liked this my first week, tho that time I used brown rice instead of wild rice. (See photo.) . I packed away 5 servings ready to go.
I did not fully prep my other meals…
For dinner, I just made grilled chicken to be used in various dishes to be determined.
For breakfast, I cooked up the remaining ground turkey so that will be an option at some point.
I need to work on prepping these other meals, but at least I am ready to make something quickly.
